Our winery’s philosophy hinges on the selection of old Ribera del Duero vines with the most deeply-rooted wine-growing traditions.

Spotting the location of selected vineyards, their study and subsequent follow-up, represents our highest priority. We aim to bring out the individual character of each plot of vines, find its optimum expression and fulfil its potential. Exhaustive fieldwork

provides us with the clues that enable us to act efficiently in the winery, and to give full prominence to the characteristics of the Tinto Fino grape. Each of our wines is inspired by the characters of the vineyards from which they come. The vine-growing system is of the low bush vine type (“goblets”). The vines grow on slopes in poor soils overlooking valleys and sandy plains, making up a patchwork of numerous small plots of land. Each plot has a medieval-sounding place-name, such as Zunbrin, Carraquintana, Mazalcastaño, Carrahontoria, Valdaya, El Arenal, Taurete, or Fuente de la Salud.

Reception of the grapes in the winery is spread over a period of time, in order to access the full ripeness of the different plots and vineyards, and to achieve the character of the wines sought by the winery. The dispersed nature and the age of our vineyards ensure a much-envied stable polyphenolic and aromatic concentration in our wines.

Our Wines

Winery

We aspire to produce top quality wines based on a meticulous selection of grapes from the very best vineyards in the D.O. Ribera de Duero, and with a neat and careful production process. Our wines are made exclusively with Tempranillo type grapes (Tinto Fino) from old vineyards aged between 25 and 100 years, planted on meagre soils located in moorland and on hillside slopes of gypsum and clay. These are the resting lands of the quaternary silt from the ice-age periods of the river Duero. They bear old vines carrying excellent grapes, gobelet-trained and using staggered plantings. Only the hoe is used and they are carefully harvested under traditional protocols.

At PICO CUADRO we work with 34 vineyards along 115 km of the Duero riverside, beginning in Quintanilla de Onésimo and ending at Burgo de Osma. We harvest some 2,000 kg per vineyard, thus minimizing the risk of losing production due to frosts, hailstorms etc. To begin at Quintanilla de Onésimo, moving along the Duero valley and finishing at Burgo de Osma, fifteen days later, allows us to harvest the grapes at the optimum ripeness for each vineyard.

We maintain a moderate and controlled production. This is essential for our purposes; we follow up step by step, without concessions to improvisation, trying at all times to maximize care and control down to the last detail, so that average annual production never exceeds 50,000 units of the highest quality. The process is controlled by the designation of origin granted by the Ribera del Duero Regulatory Council.

PICO CUADRO is located in “The Golden Mile”, spanning 22 km, from Quintanilla de Onésimo to Peñafiel. This area is recognised worldwide, and contains the most prestigious vineyards and wineries in Spain.

Our winery is located just a hundred meters from the prominent Dominio de Pingus, and a few minutes away from the prestigious bodegas of Vega Sicilia, Arzuaga, Aalto, and Abadia Retuerta, among others.

Oenologist

Felipe Castrillo Martin

Felipe Castrillo Martin and his father Antonio M. Castrillo Villamañan were the founders of the winery in 2005. Today Felipe Castrillo continues as oenologist in the winery.

He studied at the "Escuela de la Vid" in Madrid, and completed his practical training in Bordeaux. Before starting the project Pico Cuadro, he worked in several prestigious Spanish wineries. Felipe has achieved excellent scores in the prestigious magazines The Wine Advocate, Guia Peñin, Stephen Tanzer's, and Wine & Spirits & Decanter.

Javier "Pipa" Ortega

A winemaker with over 20 years’ experience, Javier was born in Valladolid and has worked with the most prestigious wineries in Spain.

His success is based on understanding the origin of the wine - the "terroir". His philosophy is to respect and take care of the vines.
